At Long Last, On-Campus Food to Crave

Lunch just got a whole lot better at Washington State University Vancouver. After years of griping from students about dull refrigerator items at the on-campus grab-and-go Café, administrators contracted with a food truck – Bribe My Belly – to be on campus, near the Life Sciences Center, two days a week. And our field test of the fresh food shows great success.

Consider the warm and crunchy nacho chips, piled high with flavorsome toppings: tender grilled chipotle chicken, perhaps, and a lethal combination of cotija and nacho cheeses. This unassuming menu item is, by our estimate, the crown jewel of all the food regularly available at WSU Vancouver. Considering the portion size for $10, it’s a fair deal and just right for your next afternoon lunch. It rates a solid 10/10.

Here’s a rundown of the menu:

Tacos. Burrito. Nachos. All three variations contain lime sour cream, cotija cheese, pickled red onions and cilantro. Choose between chipotle garlic chicken, pulled pork, and veggie for the main filling. Sliced jalapeños are available upon request. The prices listed below are calculated with tax at 8.7%, before tip.

Each taco is a 5 1/2 inch corn tortilla and includes avocado crema and shredded cabbage. You can get two for $10.87 or three for $16.30.

The burrito is a 14 1/2 inch flour tortilla with nacho cheese, shredded cabbage and avocado crema for $16.30.

The nachos, made with fresh cut corn chips and nacho cheese, come in two sizes: a small for $10.87 and a large for $16.30.

For the purposes of this review, VanCougar staff sampled Bribe My Belly’s veggie burrito, two pulled pork tacos, and the small chicken nachos (the smallest portions offered for each item). Right now for $10 you can get a panini or wrap and a can or bottle of tea from the campus Café. On average, a meal at the Café (one to two items with a drink) can range from $10 to $20.

Now, the nitty gritty.

Tacos: The soft shell of the tacos fell apart easily but had a balanced taste. The pulled pork, however, seemed to lack seasoning. We recommend the pulled pork on either the nachos or burritos instead. That said, the quality alone makes the tacos a good option compared to what you can get at the Café for $10. Overall, we rate the pulled pork tacos 6/10.

The veggie version of the burrito was made to order so it took a bit longer to be prepared. It was great though; the fresh lettuce and corn helped make it refreshing and delicious in lieu of meat. With jalapeños on the side, they did not disappoint. However, the burrito does drip a lot if you aren’t careful. Unlike the Café, its quality makes it worth the price tag. We would perhaps try it again with the chipotle chicken. Overall, we rate the veggie burrito 7/10.

Overall, Bribe My Belly’s offerings are worth the cost and definitely worth the walk across campus to the Life Sciences building where the truck is parked. The experience of enjoying something actually delicious, particularly when it’s priced similarly to what you’d pay at the Café, makes it even more satisfying.
